Step 1

Place the apricots, dates, apples, bananas, Tate & Lyle Light Soft Brown Sugar, lemon zest and juice, vinegar and spices in a large pan. Bring to the boil and simmer gently for 45-60 minutes, stirring until the mixture has softened and thickened

Step 2

Remove from the heat, allow to stand for 5 minutes, then stir gently and transfer to hot, sterilised jars. Seal, label and then store in a cool, dark, dry place. Leave to mature for 2-3 months.

TOP TIP

Served best with chicken kebabs, Mediterranean veg, halloumi and prawns.
