Spoil your loved ones with these irresistible and delicious red velvet cookies! They are crisp on the outside, with soft, chewy, and gooey middle, and are stuffed with white chocolate chips. A perfect treat for Valentines, but equally good for any other day!
In a large bowl, cream together the butter, soft light brown sugar, and Lyle's Golden Syrup, until well combined, about 2 minutes. Add an egg, vanilla, and the food colouring and mix again to combine.

Sift in the flour, cocoa, baking powder, baking soda, and salt and stir to combine with the rest of the ingredients. Lastly, fold in the white chocolate chips. Using the cookie scoop or your hands, scoop the cookie dough and roll it into 6-8 balls (they will be quite big, but feel free to make your cookies smaller, if you prefer), then transfer them into a baking tray. Place the tray with cookie dough balls into the fridge for 1-2 hours.
Once the dough has chilled, preheat the oven to 170°C fan. Bake cookies for 12-14 minutes, remove from the oven, and allow them to cool slightly, then transfer to a cooling rack. Enjoy!
